Chicken, mushroom and spinach soup
4 boneless skinless chicken thighs cut into pieces.
1 small onion chopped
2-3 cloves of garlic chopped
About 3 1/2 c water or chicken broth
1 cup chopped mushrooms
1 1/2 cups cooked white beans (1 can if in a hurry)
1 cup corn (fresh or frozen)
3 cups spinach
1/2 cup half and half
salt pepper to taste
1/2 tsp. red pepper flakes
1 tbsp. olive oil for pan
Parmesan cheese to sprinkle on top!
Heat up a 3 quart sauce pan add enough oil to just cover bottom, add chicken thighs to oil and brown.

Add onion and garlic to chicken and sauté a few minutes.
Just cover chicken mixture with about a cup of water/broth. Add salt, pepper and pepper flakes cook for 5 min.
Add mushrooms and cook 2 minutes .
Add remaining 2 1/2 cups of water/broth.
Then add half and half, white beans, corn and spinach.
Stir well and simmer for 15-20 min.
Check seasoning add more salt or pepper if needed.
Sprinkle with cheese and enjoy
