Chocolate Coconut Log
The roll....
1 cup flour
6 eggs
1 cup sugar
1 tsp baking powder
1 1/2 tsp vanilla
Mix and spread on 2 well greased 9x13 pans. Bake at 350 for 10 min or until firm to the touch. Watch closely. Do not over bake. When done, roll up with parchment paper and let them cool. Gives 2 9x13 rolls.
The chocolate pudding....
1 cup sugar
2 Tbsp corn starch
2 1/2 Tbsp cocoa
1 cup milk
1/4 cup butter
1 1/2 Tbsp vanilla
Mix sugar and cornstarch in saucepan. Add milk and butter and keep stirring over medium. Bring to boil and cook till it thickens. Add vanilla. Let cool. Unroll the dough and spread cooled pudding over. Roll up and sprinkle with 1 cup sweetened coconut
