Pineapple Stirfried Shrimp


PINEAPPLE STIRFRIED SHRIMP SERVED IN PINEAPPLE SKINS



4 fresh pineapples halved and scooped out, scooped out pineapple to be chunked (save scooped out skins)
1 bag of frozen shrimp (tails off)
1/2 orange pepper (chunked)

1/2 red pepper (chunked)
1/2 yellow pepper (chunked)
1 onion (chunked)
2 tbsp of minced garlic
1 tbsp of coconut oil
1 1/2 cups of quinoa
salt to taste


Put coconut oil & garlic in a pan and heat up. Then add shrimp, onions & peppers, sautee until tender. Meanwhile, cook quinoa according to package directions.
once Shrimp and veggies are tender, add the pineapple and cooked quinoa and simmer for about 10-15 minutes (this lets the fresh pineapple juice seep into everything) then scoop into scooped out pineapple halves and serve! add salt and pepper to taste if desired.
