Green Chile Chicken Enchilada'



A delicious Weight Watcher friendly chicken enchilada that is full of flavor and low in points!

Serves 10


Ingredients
10 low-fat flour tortillas (use whatever kind suits your eating plan)
2 cups shredded cooked chicken
1/2 cup chopped fresh cilantro
2 cup salsa verde
2 cups cooked black beans
2 tbsp butter
2 tbsp flour (can use whole wheat or almond flour)
2 cups non-fat chicken stock
1 cup low-fat sour cream ( I would use Greek yogurt)
4 oz diced green chile
1 tbsp salt (I would use Sea Salt)
1 tbsp pepper
1 cup reduced-fat Monterrey jack cheese ( I would use unprocessed cheese)


Instructions
Preheat oven to 350
Prepare a 9x13 pan with nonstick spray
In a bowl mix chicken and 1 cup salsa verde together
Divide chicken, black beans & cilantro between 10 tortillas and roll up and place seam side down in pan
In a saucepan melt butter
Stir in flour and cook 2 minutes, stirring constantly, until smooth
Add in chicken stock and whisk until smooth
Heat over medium heat to a boil and cook additional 3-4 minutes until it is thick and bubbly
Reduce heat to low and stir in sour cream, green chile's, salt, pepper and remaining salsa verde
Pour over enchiladas and top with cheese
Bake for 25-30 minutes until cheese is browned and bubbly.
